The blast chiller is an appliance that quickly lowers the temperature of fresh or previously cooked food without affecting it, but preserving its structure. Blast chilled food can be stored longer in fridges.

The appliance only works properly with iron, cast iron and iron/chrome bottom pans, all of which need to be enamelled. The generators support all these types of pans and adjust in real time to provide the same power. Pans should be between 120 mm and 260 mm in diameter.

The type and pressure of the gas used for testing is specified on the right corner of the identification plate directly fitted to the equipment.

The main advantages are the high efficiency due to the lower radiation losses, the very high heat storage capacity and the extreme ease of cleaning.
