It was back in 1981 when Lanfranco Torreggiani, owner of the company at the time, had the idea of designing and building the first professional pasta cooker: a professional machine dedicated to cooking pasta. Before then, pasta was basically prepared in the same way as at home. In both cases, a pot was used and put on the stove. When water started to boil, the pasta was added, and then drained. The system designed and patented by DESCO introduced a different method. The professional pasta cooker consists of a bowl, inside which the water is kept at temperature, thanks to electric heaters or gas burners. The pasta is placed in special baskets that can be easily inserted and removed from the bowl thanks to a handle. Once cooked, the pasta can be drained without throwing away the hot water
Advantages of the professional pasta cooker
The professional pasta cooker allows pasta to be cooked more quickly as water is not cold, but is kept at temperature. This equipment heats the already hot water, soon bringing it to the boil. Cooking time is optimised and service is faster. In addition, the baskets can hold small quantities of pasta, even of different shapes. This simplifies work in the kitchen and makes it easy to handle different orders, when each guest in the restaurant orders different dishes. In the bowls of professional pasta cookers, pasta always moves and does not stick, thanks to the turbulence created by air bubbles. This equipment also makes it possible to automate operations in the kitchen. Cooking times can be set. When the pasta is ready, the system lifts the basket. Thus, the cook does not have to worry about checking the cooking time.
Desco’s professional pasta cookers
Desco’s professional pasta cookers are manufactured with the cooking bowl made of highly corrosion-resistant Aisi 316 stainless steel. They have a capacity of 14 litres for the single module and 30 litres for the double module. A large frontal area allows excess starch to be removed during cooking and the baskets to be placed to drain the water. In the gas-fired version, powerful burners, placed near the bowl, guarantee the highest performance and very fast cooking times. In the electric version, the same function is performed by electric heating elements located inside the bowl. Water circulation is enabled by a perforated false bottom that distances the baskets 8.5 cm from the bottom.
The professional pasta cookers are also equipped with a basket lifting module, patented by DESCO in 1992, which makes cooking pasta easier and more precise. Each arm of the lift module can lift a 1/3 or 1/6 GN basket. Three different cooking times can be programmed for each arm, depending on the type of pasta to be cooked.
